Vegan banana choc chip cookies

These cookies are delicious: gluten free, vegan and very low in sugar. They are a perfect Veganuary snack! In our opinion the cookies are sweet enough with the dates, chocolate and banana but feel free to add in a little coconut sugar if you like your cookies on the sweeter side!

Ingredients


  • Half a banana (mashed)
  • 1/3 cup coconut flour
  • 1/4 cup coconut oil
  • 1/3 cup tahini
  • Handful of chocolate chips or other vegan chocolate bar (chopped into chunks)
  • 3 dates chopped into small pieces
  • Sea salt
  • 1tsp vanilla powder
  • 1tsp bicarbonate of soda
  • 2tbsp chia seeds soaked in 1/4 cup water (mix and leave to the side)
  • 2 tbsp coconut sugar (if using)

Directions


  1. Preheat the oven to 180C.
  2. Add water to the chia seeds and leave aside for the water to absorb.
  3. Sift coconut flour into a bowl and add the tahini, coconut oil, bicarbonate of soda, banana, vanilla, coconut sugar (if using) and mix well.
  4. Add in the chia seed mixture. The mixture is quite dry but this is normal.
  5. Finally mix in the date pieces and the chocolate.
  6. Separate into c. 8 balls and flatten onto a lined baking tray.
  7. Sprinkle with sea salt (trust us…!) and then pop in the preheated oven to bake for 13 minutes.
  8. Leave to cool and enjoy!
